Apple cinnamon muffins
Apple cinnamon muffins - Prep Time - 10 mins. Cook Time - 30 mins. Serves - 12 pieces Ingredients - · 1 2/3 cups self-raising flour. • 1 tsp ground cinnamon. • 3/4 cup brown sugar, firmly packed. • 75g unsalted butter, melted. • 1/2 cup milk. • 1 egg, lightly beaten. • 400g can pie apples. • Ice-cream, to serve. 1 Grease a 12-hole muffin pan (1/3-cup capacity). 2 Sift flour, cinnamon and sugar into a large bowl. Combine butter, milk, egg and apples in a separate bowl. Mix well. Add to flour mixture. Stir to just combine. Divide mixture among pan holes. 3 Cook in a hot oven (200C) for about 30 minutes, or until browned and cooked when tested. Stand in pan for 5 minutes before turning out onto a wire rack. 4 Serve warm muffins topped with ice-cream.
