Coffee Éclairs

Coffee Éclairs - Recipe Posted: 13/06/2009 10:19 From the master chef site. Coffee Éclairs Ingredients 265ml Milk 210ml Water, 1 tbsp Salt, 1 tbsp Sugar 150g butter, 260g Flour ? sifted, 8 eggs, Method - Put milk, water, salt, sugar and butter into pot. Bring to the boil ensuring all ingredients are melted. Add flour, stir to absorb all the butter mixture. Continue to cook out the flour to ensure that the mixture is cohesive dough with a shiny surface. Transfer to a bowl and knock out some heat. Add eggs two at a time, ensure the eggs are mixed in before you add more eggs. Put mixture into piping bag and pipe, pipe the thickness of the tube onto butter greased baking tray. Bake in 210º for about 20 mins then reduce temperature to 180º to dry and bake éclairs ? making sure they don?to burn. Vanilla Cream Cream Icing sugar Vanilla Bean Whip the cream with all icing sugar and vanilla bean. Fill a piping bag with cream mixture and pump into each éclair.
